Cheap Chicken Tacos

The more kids I seemed to have the more ways I looked to save $$$ … This recipe is super cheap to make… it changes slightly depending on what’s in fridge but it never fails and its on our menu weekly!!

Here is what you’ll need:

1-2 chicken breasts (I buy those big bags of frozen chicken breast at Costco $15 for about 20 breasts give or take)

taco seasoning (I buy mine in bulk pennies on the dollar compared to picking up one pack at a time)

water (can’t get much cheaper unless your using bottled water)

Shredded Cheese

Lettuce

Sour Cream

Avocados (optional… we love guacamole around here… so I always seem to have a couple sitting on the counter)

Salt, Pepper, Crushed Red Pepper

Corn Tortillas (I buy these from Costco too… Huge double pack for under $4)

Boil your chicken and let them cool... Sometimes I do this in the morning while I'm getting the kids ready for school... and toss it in the fridge till I'm ready to start cooking dinner!

Simply pull apart your chicken till its all shredded

And some water... enough to cover the bottom of the pan .... I think I put a lil over 1 cup in

We like to fry up our corn tortillas ... you don't have to ... you can use flour if your heart desires!

Let them cool on some paper towels and shape

I also had a lil pico de gallo left over from take out the other night... So I tossed it in!

Shred your cheese, cut up your lettuce, pull out the sour cream and salsa and serve up!!

  1. I loved this recipe… one thing I would change is: boil chicken and save water to add with taco seasoning (I can’t imagine how much natural good flavour would get thrown out from discarding the water the chicken was cooked in.
