So these Spring Rolls have a little story behind them!
It’s was the last day of school 2016 and my girlfriend and I had plans to take the kiddos to the beach once school lets out! Among going to the beach we each packed our own “picnic” lunches to bring along! She has 3 kids and I have 4, we both watch our budgets and are not frivolous spenders… so going out to eat with 7 kids wasn’t an option in our eyes! After the kids took off for school that last day I packed our “picnic” lunch… you know peanut butter and jellies, a turkey and cheese (as requested by one of them) grapes, chips and some Gatorade… all set!
Well as we get to the beach and unload the lunches for the kids… My friend opens her bag and says “Mmm look what I made for us!” There she pulls out some homemade Spring Rolls! Yum… I wasn’t expecting that at our end of the year beach day!
I think I ended up eating two of them… saying yum yum yum as I ate them!! Ever since then (6 months ago) I have been craving these Spring Rolls! Well yesterday I was taking one of my kids to the skate park… like I do almost every other day 😜 ! I decided to stop at my local Safeway on the way home and pick up some spring roll paper and rice noodles! I had everything else back at home that I needed!
The fun thing about Spring Rolls is you can put whatever you like in them! I worked with what I had on hand! So have fun with them… don’t think they need to turn out perfect… because those papers are not the easiest things to work with!
Prep your ingredients first so they are all ready to go:
- Spring Roll Skins
- Rice Noodles
- cooked shrimp
- cook the rice noodles, drain and set aside
- slice up zucchini, carrots and cabbage up set aside
- Get a towel damp and lay out
- Wet a spring roll skin and lay out on damp towel
- lay out spinach, cabbage, zucchini and carrots
- fold the skin so it wraps around the first stuff you put in there
- now lay two to three shrimp and finish rolling out
- Set on wax paper and repeat.
